Last night i cooked pasta the way that I like it (and if you know me you know it's grandma's spaghetti!), and I could tell Derrik was looking for a little change. I decided to take the day off because my busy summer schedule finally slowed down a little. This morning I was thinking of something I could cook for Derrik that he would really enjoy. Almost instantly I thought of Mango salsa with Tilapia. I have never been a big fan of mango salsa, or pineapple salsa non-sense because I don't think that sweetness really belongs there, but he really enjoys it. I started to look in a Bobby Flay cook book that we have and I did not see one listed so I decided to look on the internet. I found one right away. It was actually from allrecipes.com and the girl that makes it calls it "mango-licious". I don't like that name, but after cooking it tonight i thought it was delicious! It is super easy because you are just making a salsa, the marinade only takes a few minutes and the talapi takes about 10 minutes to cook. I thought it would be a good idea to put it on a bed of spinach and to make spicy broccoli for a side. (The spicy broccoli is cooked in the oven with red pepper flakes. I got the recipe from a Bethenny Frankel book!). I really enjoyed this meal because of the simplicity and the summer flavors. The only thing we did not like is that the recipe called for a small red onion, and I used less than that and the onion was still a little overwhelming. Other than that, if you are looking for a flavorful, simple, healthy meal I would strongly recommend it.
